OptiSet probe monitors coagulation process in a cheese vat to accurately initiate the cutting of the coagulum when the optimal gel firmness is achieved.  Also acts as a diagnostic tool for use by the cheesmaker to quantify the effect of process changes on cheese quality. Reduces cost, maximizes yields, and provides better consistency from vat to vat.
